Chocolate Lava Cupcakes

A few weeks ago while away on holidays, I took advantage of not only being in holiday mode, but also being in a new kitchen, new oven, fairly bare cupboards and did I mention that I was in holiday mode? As there are about 20 families we go away with, we try and organise a Ladies' Afternoon where wine and nibblies are consumed, with no husbands or children in sight. And that is where this recipe was born. I had limited supplies and a couple of my friends have special dietary requirements, so I wanted to make sure the recipe would be safe for them to enjoy. I managed to make a few batches while away and before you ask - who bakes while they're on holidays - you'll see from the recipe how simple it is to whip up. No fancy gadgets required!

So where did the name Chocolate Lava Cupcakes come from? One of the hundreds of kids that belong to one of the 20 families asked if he could have a cupcake - in a most polite and sweet way, and I simply couldn't refuse such sweetness! While enjoying the cupcake he told his mum he thought the inside was like lava - all molten and gooey and delish! The name was perfect and they've been known as Chocolate Lava Cupcakes ever since. So, thank you to T.'s young son for naming these cupcakes, I couldn't have given them a better name!

There are a few variations to the recipe and I'll include those details in the notes.

Chocolate Lava Cupcakes


Ingredients:


2 1/4 cups almond meal
3 - 4 tbs cocoa powder, unsweetened
generous handful of dark chocolate buttons
1/4 cup coconut oil
3 generous tbs of glucose
1 cup mashed pumpkin
2 eggs
1 tsp baking soda, gluten free

The dry ingredients laid out

Method:


* Preheat oven to 160°
* Place all the dry ingredients into a bowl and mix together with a wooden spoon.
* Add the eggs, mashed pumpkin, glucose and melted coconut oil.
* Stir with a wooden spoon until combined.
* Place the batter into cupcakes and bake for about 15-20minutes. It will depend on size of cupcake wrappers and your oven, of course.

Additional Notes:


* If you don't want to use mashed pumpkin, you can use a cup of pureed apple instead. If you're using apple puree, then ease up on the glucose or it may be too sweet for you. For a wholesome Red Velvet Chocolate cupcake, add a cup of raw finely grated beetroot.
* You can substitute Honey or Rice Malt Syrup if you don't have Glucose. Some may find the recipe not sweet enough, especially if they're used to eating store bought or traditional cupcakes, so you might need to add more sweetness. You could also use Stevia, I tend not to use a lot of that as I don't like the taste of it.
* When you're testing for readiness of the cupcakes, you want the skewer to be a bit dirty, but not wet. In other words,you want to under-do them to get that lovely moist "lava" quality.
* Feel free to add things like vanilla or your favourite nuts or even date chunks. Remember, I had limited items at the time.
* If you want an egg-free version, then use 2 tbs of chia seeds to 1/2 cup of water. Stir the seeds and water and wait for the seeds to expand, forming a jelly-like goo. This can then be substituted for the 2 eggs.
* The measurements I've included are approximate and even when I make batches of the cupcakes now, I play around with the quantities.
* This recipe is Gluten-Free and Paleo-friendly.

And This is why I love Social Media

And this is why I love social media.

Chocolate coated jelly snakes. Yes, that’s right, you read correctly – chocolate coated jelly snakes is what social media is all about. And this is why:  I discovered the existence of these very yummy sweeties last week thanks to @ozdj over on twitter.  @ozdj tweeted that these sweets were one of his favourites, but I’d never heard of them before. Being the chocoholic that I am, I just had to know how I could get my hands on a packet of such an exotic sweet! A couple of tweets later, I had the information I needed. Not only did I now know of their existence, but also where I could buy them, I even received a link from @CathieTranent letting me know that I could also buy them online! Sweet! I thought I would share this with you seeing as this week is #chocolateweek according to a current twitter trend. Can you imagine life without chocolate coated jelly snakes? No, neither can I! Thank you twitter, I think life is complete.

Oh and, what do I think of chocolate coated jelly snakes? Very yummy indeed!

My latest Fad, maybe...

Fads – I’ve had a few over the years. Some last a day, some several years, all my fads are completely engrossing – at the time of the fad. I want to learn all about the fad I’m into at the time, I want to chat with other people who enjoy the same fad I do, I want to work at my fad without interruptions and get cross when I can’t get my fad-fix. Then suddenly, before the fad ever gets boring or completely mastered, a newer, shinier fad comes along and I become completely engrossed in it. Sometimes this means that I abandon older fads in order to replace them with newer, fancier ones; sometimes I can run several fads side by side quite happily. It’s even been known that family and friends will place bets on how long particular fads will occupy my attention...which is a bit rude really...I’ve even been called Fad-Girl to my face. But that’s the thing – the world is full of undiscovered fads and the harder I try not to look for them, the easier these new fads find me.
My latest fad – cupcakes. Of course I’ve been denial of this fad for a long time. My family have only just cottoned on to the fact; this is indeed a fad of mine. I’ve been a closet cupcake fancier for years. It’s only recently that I’ve started baking the odd batch of two for the family. What gave it away to my family, was when I recently photographed a particularly cute chocolate cupcake - that’s when they collectively rolled their eyes and sighed and declared – “oh, looks like mum’s found a new fad...”
How often can you combine more than one fad together – in this delicious cupcake photograph, I combine my love of photography, of cupcakes and of scrapbooking (by using a craft punch to create a teensy little heart shape template)...I ask you, where is the harm in having the odd fad or two?
